Like wine? We do too! But did you know that contextualising wine culture & wine science in an era of climate change and globalisation, can illuminate how communities change and shape their worlds? Professor Dr. Demossier & Hampshire Wine School founder, Cécile Bergart, discuss wine as a cultural commodity with environmental implications, and the ‘science’ behind food & wine pairings!

Understanding Wine through Changing Communities in the Era of Climate Change

Professor Marion Demossier (Social anthropologist and Professor of French and European Studies at the University of Southampton.)
Marion recently published a book on Burgundy and ‘terroir’ which seeks to understand the long term effects of globalization on people and understanding how communities change and shape their worlds. Discussing her current project Wine World Stories which aims to create a multidisciplinary debate around wine in an era of climate change, Marion will contextualise some key features of wine and wine culture. Followed by a dialog with Andrea Frost on the science and ‘objectivity’ in wine tasting, demystifying ‘taste and place’, challenges facing the industry, wine education and its global impact.

A Scientific Approach to Wine and Food Pairing

Cécile Bergart (Owner of Hampshire Wine School, judge at the International ‘Glass of Bubbly’ Competition, and 2018 Champagne Master-Certificate recipient.)
At any great meal, what you drink is as important as what you eat. Cécile Bergart’s groundbreaking scientific approach to wine and food pairing allows us to learn how to think like a sommelier and transform every meal from ordinary to extraordinary. As a certified sommelier, a published wine educator, guest expert for Champagne World Magazine, Channel 4, BBC Radio Solent and Talk TV, and an approved wine educator for Marks and Spencer, Cecile is a modern flavour matchmaker. Learn how physics, chemistry, biology, anatomy and even mathematics has helped her to pair foo and wine to perfection.
