For as long as animal products have been on the market so have there been imitations. These products aim to emulate the attributes (taste, texture, flavor, feeling) of existing animal products. With advancements in technology, the extent of imitation has increased drastically. Prompted by environmental changes (increasing concern with sustainability, overpopulation, etc.), these emerging brands work not to supplement but to replace those they imitate. This talk will unpack some of the ways in which this process takes place, and how the market becomes a battle ground for the meaning of words.
